Lemon Matcha Cake Bites

Thirsty for Tea

These Lemon Matcha Cake Bites are a slightly more sophisticated version of cake balls, which have been all the craze over the last few years.  These truffles are just as easy to make as traditional cake balls, but with some matcha green tea powder, fresh lemon, and white chocolate, these cute little cake bites are transformed from sweet treats to charming one-of-a-kind confections.

I think I’ve gone matcha-crazed lately.  It’s that beautiful, natural green color that I can’t get enough of, especially as Christmas is coming around the corner.  There’s just no “leaf green” shade of green food coloring that can match the beauty, taste, and wholesomeness of matcha green tea.

I’ve made a matcha pound cake here by adding 2 tablespoons of matcha to my favorite pound cake recipe, but the green tea cake can also be made by mixing the same amount of matcha tea powder into a…

Earl Grey, Chocolate & Marshmallow tart

Hello baking! I have missed you. I was blessed to won an amazing package from The Food Show, courtesy of UltimateOmnoms and decided to make use of some of the amazing products in the box. The instant I saw the Fresh As freeze dried cherries, I knew a marshmallow had to be made (they taste amazing and 100 times better than artificial flavoured store bought marshmallows), and the Paneton Bakery tart shells as well as the Traid Aid chocolate block were exactly what I needed to make this Earl Grey Milk Chocolate & marshmallow tart.

Admittedly the marshmallow was supposed to be raspberry instead of cherry (I didn’t read the packaging properly and assumed raspberries), but the cherries worked just as well. Also, if you haven’t tried Earl Grey and milk chocolate, you must! I adore tea infused chocolates, and this was another winning combination.

Flourless Orange, Maple and Chia Tea Cakes

hare & tortoise kitchen

Using natural sugars from maple and coconut, coupled with seasonal fruits (granny smith apples and navel oranges) has allowed us  to create a yummy treat without the guilt factor.

Maple syrup contains nutrients to include calcium, iron, zinc, potassium and manganese. When shopping for maple syrup, aim to buy real maple syrup, and avoid the maple “flavoured” syrup. The other sweetener in this recipe is coconut sugar. It contains vitamin C, potassium, phosophorus, magnanese, calcium, zinc and iron and has a low glycemic index of 35, compared to refined sugar which is up between 65 – 70. Both Maple syrup and Coconut Sugar are extracted from the sap of trees and not altered chemically in any way, BONUS!! However they are still sugars, and should be consumed in moderation.

This recipe is super easy .. and we almost forgot to mention, gluten free too!

Mini Victoria Sponge Cakes

MyYellowApron

Optimized-IMG_3806
I just got back from Europe and I want to share a favorite dessert that I sampled in London – non stop – Victoria Sponge Cake.
See more pictures of London and read about my trip here – LONDON – Grey Skies and Red Buses

Victoria Sponge Cake Victoria Sponge Cake

Almost everywhere in London – Bakeries, Tea places and Cafes,  I found one thing that was omnipresent – Victoria Sponge Cake. It was love at first sight for me and I was immediately taken by these mini sponge cakes sandwiched together with jam and dusted with powdered sugar. The best part was, they were not covered with pretty frosting.  This was the only dessert, that, I kept on eating , the whole time that we stayed in London. And, now that, I’m back in California, I tasked myself to bake this Cake – Just for me.
These spongy cakes are named Victoria…

Cinnamon Tea Cakes

Cooking Up A Storm

2016 10 October Cinnamon Tea Cakes - Feature Image-1-01.jpeg

Cinnamon tea cakes. These cute little cupcake-type things are so easy to whip up, and for me, bring back memories of classmates wanting to swap them for whatever awesome thing their mum had packed in their lunch that day.

Wikipedia tells me that a tea cake is defined as follows:

A quick and easy cake to make, typically ready to serve warm from the oven in less than 30 minutes. Ingredients usually consist of always available ingredients in the kitchen cupboard and they are typically flour, eggs, butter, cinnamon and sugar. It is traditionally served warm as an accompaniment to tea.

So that gives you a bit of an idea about what these are. Simple recipe, easy to make, and fast to whip up. I can just imagine having unexpected guests (in my head, I’m living in Jane Austen’s world – pretty dresses and all!) and whipping up a batch…
